Comfort Chinese Udon Noodles with Chicken and Bok Choy

It's nutritious and simply seasoned bowl of noodles with lots of vegetables.

Ingredients: 2 to 3 servings

Cooked udon noodles
2 servings
Bok choy
2 heads
Chicken thigh or breast
about 1/4
Shiitake mushrooms
700 ml
Chicken stock granules
1 heaped tablespoon
Soy sauce
1/2 tablespoon
1 scant teaspoon


1. Thinly slice the chicken and cut the vegetables into bite-size pieces.
2. In a pot, bring water to a boil and add the seasonings and vegetables except the green parts of bok choy. Lower the heat and cook until vegetables are softened, about 10 minutes.
3. Skim off the scum if necessary.
4. Add the green parts of bok choy and noodles and cook another 5 minutes and it's done.
5. With cabbage, carrots, onion, shimeji mushrooms, pork ham.

My daughter really liked it.
