Christmas 2008 Potato Salad Christmas Tree

This is a fun Christmas version of my potato salad.

Ingredients: 5-6 people

Potato Salad:
Potatoes
500 g
Soup stock cube
1
Mayonnaise
5 tablespoons
Lemon juice
10 ml
Salt and pepper
As you like
Decorations:
Broccoli
1 head
Carrot
2 slices
Lettuce
As you like
Santa Claus shaped macaroni
1 piece

Steps

1. Soak the cut potato pieces in water to remove the astringency.
2. Drain and then refill the pot with enough water so it is just covering the potato pieces. Add soup stock and then boil.
3. Once the potatoes are done, take them out and drain in a colander.
4. Put the potatoes in a bowl and add salt, pepper, and mayonnaise.
5. Mix together without mashing the potatoes too much.
6. Arrange your potato salad on a plate in the shape of a Christmas tree.
7. Add two diagonal spiral lines of broccoli on for decoration.
8. It looks like this from above.
9. Cut thin slices of carrot into star shapes and boil to decorate.
10. You can add tomatoes or thinly cut carrots to make it really colorful!
