My Mother's Staple Simmered Pork Belly and Daikon Radish

This every-day dish is easy to make--just put everything in the pot and let it cook on it's own. It's a side dish you always wish you had made more of. It goes well in bentos, too!

Ingredients: 2 Servings

Daikon radish
About 10cm
Pork belly (Thinly sliced)
100g
◎Japanese dashi stock
200ml
◎Mirin
2 tablespoons
◎Soy sauce
2 tablespoons
◎Sugar
1 tablespoon
Red chili pepper
1-2

Steps

1. Cut the daikon radish into 2cm slices and cut each in half lengthwise. Boil, then drain.
2. Add the ingredients marked ◎ to the pot and simmer for about 15 minutes. Add red chili peppers to taste.
3. Once the daikon radishes become soft and flavorful, add the pork belly, bring to a boil, skim off the scum, and you done.

Story Behind this Recipe

This goes well as a side dish with rice and is quick and easy. Since daikon radish is cheap, I make large batches of this.
