Persimmon and cured ham appetizer with a touch of yuzu

These are very easy to make, despite their nice presentation, so they're great to serve at parties. They go well with wine, too!

Ingredients: 12 servings

Persimmon
1
Cured ham
6 slices
Greek yogurt or cream cheese
40 g
Honeyed yuzu
as desired
or marmalade
as needed

Steps

1. Peel the persimmon skin, and slice into wedges of about 7~8 mm. Slice your cured ham into the same width as your persimmon.
2. Place a small dollop of the greek (or strained) yogurt on top of your persimmon wedge, and add about 1/2 a teaspoon of the honeyed yuzu peel. Wrap the entire thing with a slice of cured ham.
3. You can prepare your own honeyed yuzu by filling a jar of yuzu (or Meyer lemon) slices with honey. You'll need to wait about a week for the zest to marinate.
