Chop the sweet potatoes in half and steam in a pressure cooker.
Scoop out the insides of the potatoes and mix together with the rest of the ingredients in a bowl.
Fill the potato skins with the sweet potato mix. It should look like the photo.
Glaze the tops with a beaten egg glaze and bake in an oven preheated to 250°C for approx. 10 minutes or until browned.
Story Behind this Recipe
I decided to try to make sweet potato bites with some sweet potatoes that we grew at home.
To preserve the delicious flavour of the anno potatoes, don't scoop out too much. Mix the other ingredients in whilst the potato is still a little warm so that the sugar and skimmed milk powder dissolves well and the egg doesn't harden. Adjust the baking time according to your oven.
