Chicken Breasts & Mitsuba with Umeboshi

I flavored chicken breasts with umeboshi pickled plums. Since this is such a refreshing and light dish, you can eat as much as you like.

Ingredients: 2-3 servings

Chicken breast
1 (300g)
Mitsuba
1 bunch
Sake
1 tablespoon
Salt
1/4 teaspoon
☆Ground white sesame seeds
1 tablespoon
☆Umeboshi
1 large Recipe ID: 608314
☆Soy sauce
2 teaspoons
☆Rice vinegar
1 tablespoon
☆Sugar
1 teaspoon

Steps

1. Remove the skin from the chicken, cut open, and spread to make it thin. Season with salt and sake, lightly cover with plastic wrap, and microwave for 5-6 minutes.
2. Parboil the mitsuba and chop.
3. Pound the umeboshi. Combine all of the ☆ ingredients.
4. After the chicken from Step 1 has cooled, tear it apart.
5. Add Step 4 to Step 3 and stir it together.
