Easy Homemade Hokkaido Ramen Salad

The third in my series of easy Hokkaido cuisine!
This popular dish is on the menu of every izakaya (Japanese gastropub) in Hokkaido.
Please enjoy with your favorite additions and dressing.

Ingredients: 2 servings

Fresh ramen noodles
1 serving plus
Additions of your choice:
Broccoli
3 to 4 florets
Sliced onions
1/10
Chicken tenders

Lettuce
2 to 3 leaves
Tomato
1/2
Onsen egg (soft-set egg) or boiled egg
1
Yuzu pepper dressing:
Sugar
1/2 tablespoon
Soy sauce
1 tablespoon
Mild rice vinegar
1 tablespoon
Mayonnaise
1 tablespoon
Yuzu pepper paste
1 teaspoon
Sesame dressing:
Sesame dressing (store-bought)
2 tablespoons
Mayonnaise
1 tablespoon
Soy sauce dressing:
Mild rice vinegar
1 tablespoon
Soy sauce
1 tablespoon
Sesame oil
a small amount
Mayonnaise
1 tablespoon

Steps

1. Cook the ramen noodles following package instructions, and rinse in cold water to firm. (Boil broccoli along with the noodles. Add sliced onion 10 seconds before the noodles finish cooking.)
2. Cut the lettuce and tomato into easy to eat pieces. Wrap chicken tenders in plastic film and microwave for 1.5 minutes. Leave it until it has cooled down, then shred.
3. Combine the cooked, cooled, and well drained noodles from Step 1, plus the onion with the dressing of your choice (The photo shows yuzu pepper dressing, which I recommend).
4. Combine lettuce, ramen noodles, other vegetables, and egg on a plate in that order and it's done! Top with mayonnaise or crispy fried onions to taste.

Story Behind this Recipe

I was surprised that nobody knows about this salad outside of Hokkaido.
It's such a delicious izakaya staple...
