Use Up Egg Whites Making Mini Cakes

This recipe uses 4 egg whites.
These mini cakes will help you use up extra egg whites all at once.
I noted how to make chocolate, plain, and matcha flavors.

Ingredients: 40 small cakes

Granulated sugar
70 g
Cake flour
35 g
Cocoa powder
15 g
Almond flour
50 g
Powdered sugar
50 g
Butter (salted or unsalted, either is ok)

Steps

1. Sift the cake flour and cocoa powder. Put the almond powder and the powdered sugar into a plastic bag and mix.
2. Whisk the egg whites and granulated sugar until the sugar dissolves.
3. Add the dry ingredients from Step 1 to the mixture from Step 2. Mix with a whisk. Add cake flour and mix again.
4. Make browned butter and add it to the mixture from Step 3. Mix with a whisk.
5. Pour into a mold and bake for 20 minutes in a 190ºC preheated oven.
6. To make plain flavored cakes, make the batter using 50 g of cake flour.
7. To make matcha cakes, make the batter using 50 g of cake flour and 5 g of matcha.
8. To brown the butter, put the butter into a pot and stir continuously over low heat. When the perfect color is reached, place the bottom of the pot over ice water.

Story Behind this Recipe

I wanted to use up egg whites, so I made these mini cakes only using egg whites. The chocolate version was the most delicious.
