Chinese chive omelets go well with rice, but they're even better with ankake gravy.

Ingredients

Chinese chives
1 bunch
Eggs

200ml
●Soy sauce
2 tablespoons
●Mirin
3 tablespoons
●Oyster sauce
1 tablespoon
Vinegar
1/2 tablespoon
Grated ginger
1 piece
Katakuriko slurry
as needed
Sesame oil
1 tablespoon
Salt and pepper

Steps

1. Put water and the ● flavoring ingredients into a pot, and turn on the heat. After bringing it to a boil, thicken with water-dissolved katakuriko. Add in the vinegar and ginger last.

3. Heat a pan, and pour sesame oil (1/2 tablespoon). Pour the eggs after it has warmed, and take the eggs out once they're cooked halfway through.
4. Heat the remaining sesame oil, saute the Chinese chives, return the eggs from Step 2 to the pan, quickly fry, arrange on a plate, and cover with ankake sauce.
