Put the butter in a bowl and soften at room temperature.
Mix the finely chopped chives, lemon juice, pepper and garlic (if desired) evenly into the butter.
Leave to chill and harden in the fridge. It's best enjoyed from the next day, when all the flavours have blended.

I ate this at a herb garden. It was delicious, so I tried making it myself.
I tried making this with basil, oregano, Italian parsley and other herbs, but this version, using chives with a hint of garlic, was the best. It's nice with other herbs and finely chopped garlic added.
