Drain the excess water from the tofu. Mix together the sauce ingredients - mayonnaise, miso, sake and sugar. Finely shop the shiso leaves.
The meat-miso mix:
Brown the ground meat and flavor with the meat-miso mix ingredients - miso, mirin, sake, salt and pepper. Turn the heat off, and add the chopped shiso leaves.
Cut the tofu into pieces, and put into a gratin dish. Put in the meat-miso mix, then the sauce, and bake in the oven until browned on top.

I adapted a very popular recipe from our nursery school.
The ingredient list may seem rather complicated, but this recipe is easy enough to make in large batches! The important point is to put miso in both the meat mixture and the sauce! At the nursery school we allow for 40 g （weight of the tofu only）per serving.
