Our Nursery School's Tofu & Ground Meat Miso Au Gratin

This is the no. 1 recipe requested at our nursery school. It's really popular with the children as well as the staff.

Ingredients: 2 servings

Tofu
400g
Ground pork or ground chicken
200g
Shiso leaves

for the meat-miso mix:
Miso
1 teaspoon
Mirin
2 teaspoons
Sake
1 teaspoon
Salt and pepper
a pinch of each
for the sauce:
Mayonnaise
1 tablespoon
Miso
1 tablespoon
Sake
2 teaspoons
Sugar
1 teaspoon

Steps

1. Prepping: Drain the excess water from the tofu. Mix together the sauce ingredients - mayonnaise, miso, sake and sugar. Finely shop the shiso leaves.
2. The meat-miso mix: Brown the ground meat and flavor with the meat-miso mix ingredients - miso, mirin, sake, salt and pepper. Turn the heat off, and add the chopped shiso leaves.
3. Cut the tofu into pieces, and put into a gratin dish. Put in the meat-miso mix, then the sauce, and bake in the oven until browned on top.
4. Finished! The photo shows a single serving baked in a dish.
5. Variations: Add whatever ingredients you like! Mushrooms, eggplants, green onions and cheese are popular.
