Tomato and Cheese Sandwich with Pesto alla Genovese

Filled with avocado paste, oil-packed sun-dried tomatoes, pesto alla Genovese and mozzarella cheese, this is a sandwich packed with Italian flavor.

Ingredients: Serves 1-2 people

Sliced bread
Enough for 1~2 people
Avocado
1
Chilli powder
a little
Lemon juice
1 tablespoon
Sun-dried tomatoes (or fresh tomatoes)
1~2 slices
Pesto alla Genovese (Recipe ID: 581801)
1 teaspoon
Mozzarella cheese
2 slices
Salt and pepper
as needed

Steps

1. Remove the pit from the avocado. Add the lemon juice and chili powder and mash. Slice the bread in half.
2. Spread the pesto on the bottom bun and place the sun-dried tomatoes, avocado and mozzarella cheese on top. Cover with the top bun.

I needed to use up Genovese pesto, oil-packed sun-dried tomatoes, mozzarella cheese and avocado, so I made them into a sandwich.
