Very Easy Macrobiotic Recipe Fried Koya Dofu

It tastes just like fried chicken, but since it's not made with meat, it's great for people who are on macrobiotic diets!

Ingredients: one 10 cm square of koya dofu

Koya dofu
10 cm square
○Dashi stock made of kombu & dried shiitake (or water)
50 ml
○Soy sauce
1 scant tablespoon
1/2 tablespoon
○Cooking sake
1/2 tablespoon
○Grated ginger
a small amount
○Grated garlic
a small amount
about 4 tablespoons
Canola oil
as needed


1. Mix the ○ seasoning ingredients along with the ginger, and garlic.
2. Soak the koya dofu in the Step 1 sauce for about 10 minutes. I usually do this before going to bed, and cook it the next morning. The koya dofu absorbs the flavour really well, so I recommend it!
3. Cut into bite-sized pieces, and coat with katakuriko.
4. Lightly shallow-fry in canola oil, and it's done!
