Shio-koji Chicken Wings

Enjoy these delicious chicken wings with the natural sweetness of shio-koji.  
They're very crispy, glossy, and juicy.

Ingredients: 4 servings

Chicken wings
Shio-koji (salt fermented rice malt)
4 tablespoons


1. Add 2 tablespoons of shio-koji to the tray and place on top of gauze.
2. Line the chicken wings on the gauze and cover with more gauze.
3. Add 2 tablespoons of shio-koji and let marinade for 15 to 20 minutes.
4. Cook in the oven and it's complete.
5. A reader informed me that if you let it marinade in the shio-koji overnight, it becomes even more crispy and juicy.
