Warm Honey and Cinnamon Cafe au Lait

The gentle sweetness of honey combined with the scent of cinnamon is really calming. Serve on cold mornings, or for afternoon tea.

Ingredients: Makes 1 mug

Instant coffee
1 heaped teaspoon
Boiling water
2 full cups
About 80% of the cup (to counter the bitterness of the coffee)
Cinnamon powder
3-4 shakes
1-2 teaspoons


1. Make very strong black coffee in a cup.
2. Sprinkle in the cinnamon and mix well. This will prevent the cinnamon from clumping.
3. Carefully add in the milk.
4. If you want to heat up the milk, mix in the honey to melt and it's done.
5. You can use maple syrup instead of honey. If you do, increase the quantity of syrup. When using honey or sugar syrup, reduce to half the amount listed and it still tastes great.
6. If you are on a diet, use artificial sugar and non-fat milk. Thanks to the cinnamon, it will still have loads of flavor.
