Apple and Honey Muffins

Enjoy the texture of apples in these muffins. They are healthy as they're without butter, and are great for breakfast or for teatime.

Ingredients: 5 muffin cups

1 tablespoon
Cake flour
100 g
Baking powder
1/2 teaspoon
40 g
50 ml
Vanilla oil
a small amount


1. Peel the apple and cut into 1 cm cubes or into quarter-round slices. Put the apple and honey in a heatproof dish and microwave for 3 minutes.
2. Sift the cake flour and baking powder.
3. Add the egg into a bowl, and beat well. Add the honey and mix well.
4. When thickened, add the milk and apple, then mix well.
5. Add the dry ingredients and vanilla oil, and fold in.
6. Pour the batter into muffin cups, and bake in the oven preheated to 180℃ for about 25 minutes. (Please adjust the baking time while checking occasionally.)
7. When you insert a skewer and it comes out clean, it's cooked through. Place on a rack to cool.
8. Done.

Story Behind this Recipe

I made muffins with apples, which I juice every morning. Since I wanted to make them healthy, I made it without butter.
