Simmered Pork Offal

Prepare the offal and simmer for a tender and light dish.

Ingredients: 4 servings

Pork offal
200 g
★Dashi stock
6 cups
☆Thinly sliced ginger
1 knob
☆Japanese leek
the green section of 2 stalks
Daikon radish
10 cm
2-3 tablespoons
Soy sauce
1-2 tablespoons
2 teaspoons
Shichimi spice
to taste
Green onion or Japanese leek
to taste


1. Boil the offal once, then dump out the water. Wash and cut the larger pieces into bite-sized pieces.
2. Put Step 1 and the ★ ingredients into a pot and turn on the heat. Once it comes to a boil, add the ☆ ingredients and simmer on low heat for 1 hour.
3. Cut the daikon into 8 mm pieces, the carrot into 5 mm pieces. Cut the konnyaku into thin, rectangles and lightly boil to remove the astringent taste.
4. Add Step 3 to the pot from Step 2 and simmer until the vegetables have become tender (about 20-30 minutes). Remove the Japanese leek and the ginger.
5. Lastly, flavor with the miso, soy sauce, and mirin.
6. Serve in a dish and garnish with shichimi spice and finely chopped green onion.
