Stir-Fried and Simmered Vegetables With Mushrooms and Konnyaku

A low calorie stir-fried and simmered dish of mushrooms, konnyaku and vegetables. No oil is used and it's easy to make, so it's a great dish when you're on a diet!

Ingredients: 2 servings

Shirataki noodles (ito-konnyaku)
200 g
Shimeji mushrooms
60 g
Enoki mushrooms
60 g
Bean sprouts
60 g
30 g
Chinese cabbage
100 g
Green onions
To taste
@ Chinese soup stock, soy sauce
2 teaspoons each
@ Miso, sake
1 teaspoon each
@ Doubanjiang spicy bean paste, grated ginger
A small amount each
Salt and pepper
a small amount each


1. Parboil the shirataki noodles and drain. Finely shred the carrot and cabbage. Take the stringy roots off the bean sprouts. Shred the mushrooms.
2. Put all the ingredients from Step 1 into a frying pan and turn on the heat.
3. Put on a lid and steam-cook over low heat for 1 to 2 minutes.
4. When the vegetables have wilted, add the @ seasoning ingredients. Turn up the heat to medium-high, and stir fry to evaporate the moisture and distribute the flavors.
5. Taste, and add salt and pepper if needed.
