Breakfast Rice with Grated Yam

Grinding the yam with a mortar and pestle makes it nice and gooey. Pour over rice and serve.

Ingredients: 4 servings

Nagaimo Yam
400 g
Dashi stock
100 ml
Soy sauce
1 tablespoon
1 teaspoon
Egg yolk
to taste


1. Peel the yam and soak it in vinegar water. Grind it in a mortar. Add the soy sauce and mirin to the dashi stock.
2. While grinding the yam, gradually pour in the soy sauce and dashi mixture until smooth. You can optionally add egg yolk.
3. Put some rice in a bowl and poured Step 3 over top. Garnish with aonori.
