Ricotta Cheese, Walnut, and Tomato Sauce Pasta

A creamy tomato sauce with ricotta cheese and walnuts. It goes well with spaghetti or penne. Make a delicious Italian dish at home.

Ingredients: 2 servings

Ricotta cheese (or cream cheese if you can't get ricotta)
100 g
Walnuts - other nuts are OK too
30 to 50 g
Dried tomatoes
Tomato paste (optional)
1 teaspoon
White wine
20 to 30 ml
Milk or cream
30 to 40 ml
1/3 to 1/2 teaspoon
a small amount
Olive oil
1 tablespoon
Pasta of your choice
2 servings
Pasta boiling water
2 to 3 tablespoons
Italian mixed herbs or basil
a small amount


1. Soak the dried tomatoes in boiling water until covered. Pulverize the walnuts in a food processor until it's almost a powder.
2. Heat olive oil in a pan and saute the finely chopped onions. Add the soaked dried tomatoes along with the soaking water, the powdered walnuts, white wine, and tomato paste. Simmer.
3. Boil the pasta. Add the ricotta cheese to the pan, along with the milk or cream and some of the pasta boiling water. Add the cooked pasta and mix well, Season with salt and pepper, scatter in the herbs, and it's done.
