Egg-free Cornmeal Cookies

These crunchy cookies are made with cornmeal. They have a small amount of oil and sugar. They also smell great.

Ingredients: about 1 baking sheet

50 g
◎Cake flour
50 g
a pinch
◎Beet sugar
20 g
☆Olive oil (or vegetable oil)
20 g
30 - 35 g (as needed)


1. Place the ◎ ingredients into a bowl and mix together with a whisk.
2. Add the ☆ olive oil and use your hands to mix it in by rubbing together.
3. Gradually add the ★ milk and bring the dough together (add as much milk as needed.)
4. Roll the dough out to a thickness of 2-3 mm and poke holes.
5. Bake for 20-25 minutes in a preheated 180℃ oven (the baking time will vary on the thickness of the cookies).

Story Behind this Recipe

I wanted to make a healthy snack made with cornmeal, so after many attempts, I came up with this. They also come out great if made with vegetable oil. If using vegetable oil, 10 g will give you a biscuit-type cookie and 20 g will give you more of a cookie texture. (adjust the amount of milk depending on how much oil you use.)
