Place the ◎ ingredients into a bowl and mix together with a whisk.
Add the ☆ olive oil and use your hands to mix it in by rubbing together.
Gradually add the ★ milk and bring the dough together (add as much milk as needed.)
Roll the dough out to a thickness of 2-3 mm and poke holes.
Bake for 20-25 minutes in a preheated 180℃ oven (the baking time will vary on the thickness of the cookies).
Story Behind this Recipe
I wanted to make a healthy snack made with cornmeal, so after many attempts, I came up with this. They also come out great if made with vegetable oil. If using vegetable oil, 10 g will give you a biscuit-type cookie and 20 g will give you more of a cookie texture. (adjust the amount of milk depending on how much oil you use.)
Gradually add in the milk while keeping an eye on the dough. I think the amount of flour needed will differ depending on the brand. If the dough becomes too loose, use cornmeal to dust the dough with while rolling it out.
