Put the ● ingredients in a plastic bag, then rub in and let sit for 1 hour (or overnight) in the refrigerator. See Recipe ID: 646307.
Cook the rice to use as sushi rice. Mix in the sushi vinegar to make sushi rice.
Put the salsa ingredients in a bowl, then mix.
Place chicken skin side down in a heated frying pan. Pan fry until crisp, turn it over, reduce heat to low, then cover and cook for about 5 minutes.
Remove the lid, turn up the heat, pan fry both sides, then remove from the pan. When it cools, chop into bite-sized pieces.
Slice the avocado into 1-cm sticks, then squeeze lemon juice over the top.
Place the sushi rice, chicken, avocado, and drained salsa sauce on a piece of roasted nori seaweed, sprinkle with cheese or mayonnaise to taste, then roll it up.

Story Behind this Recipe
I was selected to be a recipe tester for a sushi hand roll project, so I came up with an unusual hand roll recipe. I thought this would be refreshing and tasty.
In Step 1, the longer you soak the chicken, the more tender it will be. Sprinkle with cheese or top with mayonnaise to taste. Both taste great. If you prefer spicy salsa sauce, add chili powder to taste.
