Winter Melon and Apple Jam Marmellata

A jam that is rich in fiber and vitamin C, made with winter melon and polyphenol-filled apples.

Ingredients: The amount shown in the main photo

Winter melon
1/4 (net weight 500 g)
Apple
1 (net weight 220 g)
Lemon juice (I use Pokka Lemon)
1 tablespoon
Soft light brown sugar
200 g
Starch sugar (optional)
1 tablespoon

Steps

1. Remove the skin from the winter melon and 1/2 of the apple, and finely mince in a food processor. Cube the remaining 1/2 of the apple.
2. Put the winter melon, apple, lemon juice, and soft light brown sugar in a pot, and mix. Let sit for 10 minutes until the flavors blend.
3. Simmer on low heat for about 1 hour. Mix from time to time.
4. If the liquid has not boiled down after 1 hour, increase to medium heat, taking care not to burn it, cook out the moisture, then add the sugar starch.
5. Transfer to sterilized jars, then store in the refrigerator.
