Classic Japanese Okara Dish

This is a recipe to make a basic okara dish. It's just lightly seasoned, but the taste always brings back memories.

Ingredients: 4 servings

Fresh okara
150 g
Dried shiitake mushrooms
Green onion (with the green parts)
Dashi soup stock (water used to hydrate the shiitake mushrooms)
300 ml
★ Soy sauce
1 1/2 tablespoons
★ Sugar
2 - 2 1/2 tablespoons
Bonito flakes
1 pack (6 g)
Dashi stock granules
1 teaspoon
Sesame oil
to taste


1. Hydrate and thinly slice the shiitake mushrooms. Julienne the carrot into 3 cm long pieces. Slice the green onions diagonally.
2. Pour some sesame oil into a pan. Stir-fry the carrots and the shiitake mushrooms. Add the okara and cook briefly. Pour in the dashi soup stock.
3. Add the ★ seasonings and the soup stock granules. Simmer until the water is completely reduced (about 15 minutes).
4. To finish, add the green onions and the bonito flakes. Simmer briefly.
