Chimichurri Sauce

This Argentine sauce known as chimichurri sauce has become popular recently in the States. This sauce is easy to make and goes great with grilled meat or salmon.

Ingredients: About 1 cup (240 ml)

Italian parsley
1 cup (packed)
Fresh coriander leaves
1/3 cup (packed)
Olive oil
1/2 cup
Red wine vinegar
1/3 cup
3-4 cloves
Red chili pepper flakes (for pizzas, etc.)
1 teaspoon
Cumin (powdered)
1 teaspoon
About 1/2 teaspoon (Adjust to your desired level of saltiness)


1. Put all of the ingredients into a food processor (you can also use a blender) and blend. Blend until the garlic is very fine.
2. Taste it and add salt and red chili pepper as desired. Transfer it to a glass bowl and then let it rest at room temperature for 2-3 hours for the flavors to blend.
3. Italian parsley is quite fluffy so push it down firmly to make the 1 cup serving.
4. You can add a small amount of finely chopped onions and lemon juice if you'd like. You can also add some squeezed lime juice, which is also delicious.

Story Behind this Recipe

We had some chimichurri sauce in a restaurant and my family loved it. I tried making various versions of the recipe and I eventually arrived at this. It seems like you can also make this with a herb mix from Argentina. I had my friend from Argentina send me one.
