Mock BBQ Chicken

These are crispy chicken bites in a BBQ style sauce.

Ingredients: For 2 chicken thighs

Chicken thighs
Salt and pepper
1 teaspoon
BBQ style sauce

Whole grain mustard
2 tablespoons
2 tablespoons
4 tablespoons
Dashi soy sauce (or normal soy sauce)
2 teaspoons
Coffee creamer
2 portions
You can use milk or cream instead


1. Combine the BBQ style sauce ingredients.
2. Discard the excess fat or any gristle from the chicken. Slice the chicken against grain to avoid shrinkage and cut into bite sizes. Season with salt and pepper.
3. Heat a frying pan without oil and place the chicken with the skin side down. Fry without moving until crispy browned. Check now and then to see if it's not burnt.
4. Turn over the chicken and fry the other side. After both sides are done, reduce the heat to low and cover with a lid to steam.
5. After the chicken has cooked through, put the chicken with the skin side down. Increase the heat to high and fry the chicken until the oil from the skin has rendered.
6. Discard the excess fat from the pan and reduce the heat to low. Pour in the sauce ingredients and agitate the pan around to coat the chicken pieces with the sauce. Done!
