Shave the burdock root into thin pieces. Cut the bacon into 1 cm pieces. Finely chop the garlic. Cut the sweet potato into small thin pieces without peeling it.
Add the salt to boiling water, and start cooking the pasta. Cook the sweet potato in the same pot for about 2 minutes, and scoop out.
Put the olive oil and garlic in a frying pan and stir fry over medium heat. Add the burdock root, bacon, parboiled sweet potato, soup stock cube and white wine, and bring to a boil over high heat.
When the burdock root has cooked to a crisp-tender stage, and the soup stock cube has dissolved, turn off the heat. Add the butter and cream.
Season with salt and pepper and mix the sauce well. Add the freshly cooked pasta, mix well and it's done! Add some chopped parsley for color.
Story Behind this Recipe
It's important to eat a lot of fiber-rich foods in order to maintain a happy digestive system. I combined such ingredients here.
If you cook it for too long after adding the cream, the sauce will split. Use the residual heat from the pasta when mixing. If you use less penne and more of the other ingredients, it's more effective in dealing with digestive issues. You can use linguine or fettuccine instead of penne.
