Okinawan-Style Mixed Rice "Kufua Juushii"

Okinawan-Style Mixed Rice "Kufua Juushii"

"Kufua = firm" and "Juushii = mixed rice." This is a mixed rice often found at Okinawan events. It's simple and delicious!

Ingredients: 5~6 servings

White rice
2 rice cooker cups worth (360ml)
Pork (this time, I used pork belly)
150 g
Dried shiitake mushrooms
30 g
Green onion or scallion
1/2 a bunch
2 tablespoons
● Usukuchi soy sauce
2 tablespoons
1/2 teaspoon
●Cooking sake
3 tablespoons
Dashi stock
as required
Sesame oil
to preference

1. These are the ingredients. Soak the shiitake mushrooms in water, boil the pork, and cut everything into small pieces.
2. Wash the rice, then add the ● seasonings and add dashi stock in place of water (you could also add the liquid from soaking the shiitake mushrooms).
3. Add all the ingredients from Step 1 except the green onions and start the rice cooker.
4. Once it has cooked, mix in the sesame oil and green onions. Check the taste. If it's too weak, add some salt. It's ready!
5. I added Hijiki and sesame oil make a great combination!
