Spicy Cucumber and Cellophane Noodle Salad

This is a spicy cellophane noodle salad that goes well with Chinese dishes.


Cellophane noodles
30 g
Wood ear mushrooms
2 to 3
Imitation crab sticks
1 packet
★ Sushi vinegar

★ Light soy sauce
1 1/2 tablespoons
★ Sesame oil
3/4 tablespoon
★ Doubanjiang
1/2 teaspoon
★ Sugar
1 teaspoon
to taste
White sesame seeds
as needed


1. Cut the cucumber into 4 pieces, and bash them up with a rolling pin. Rehydrate and chop the wood ear mushrooms. Boil the harusame noodles and cut into easy to eat lengths. Shred the crab sticks.
2. Put the ★ ingredients into a bowl and mix. Add the Step 1 ingredients and mix. Transfer to serving plates and sprinkle with white sesame seeds.
