Basic Mapo Tofu

This spicy mapo tofu is great for hot summer days.

Ingredients: 2-3 servings

1 - 1.5 block
Ground meat
150 g
Finely chopped Japanese leek
★ Finely chopped garlic
1 tablespoon
★ Finely chopped ginger
1 tablespoon
★ Doubanjiang
2 teaspoons
★ Tianmianjiang
1 tablespoon
☆ Sake
1 tablespoon
☆ Soy sauce
1 tablespoon
☆ Water
200 ml
☆ Chinese soup stock
2 teaspoons
Sansho pepper powder
to taste
1 and 1/2 tablespoons
1 tablespoon
2 tablespoons
Sesame oil
1 teaspoon
Green onions or scallions


1. Stir fry the ingredients marked with ★ and add the ground beef. When the meat changes color, add the ingredients marked with ☆ and the boiled tofu.
2. Add the finely chopped Japanese leek to Step 1. Stir in the katakuriko slurry and turn off the heat. Add the sansho pepper powder and sesame oil.
3. Transfer to a serving plate and scatter some chopped green onions on top.
