Cucumbers with Wasabi and Miso-Mayo

The miso provides depth and richness, the mayonnaise rounds out the flavor, while the wasabi adds a piquant accent to this side dish.

Ingredients: 1 cucumber's worth

Cucumber (or celery)
1 (or 1/2 stalk celery)
2 teaspoons
about 1 teaspoon
about 1 teaspoon


1. Cut the cucumber into 5 mm slices. Sprinkle with salt, then soak in water for 5 minutes. Drain well. Mix the wasabi and miso with the cucumber slices.
2. Add the mayonnaise just before serving. Sprinkle sesame seeds or bonito flakes to taste.
3. You can cut the cucumber into sticks too.
4. If you don't drain the excess water, it'll become watery, but you can use the water to make dressing to serve on salads or tofu.
5. Great with celery too!
6. Or combine cucumber and celery.
