Easy Carrot Cake with Pancake Mix

You don't need butter or margarine.
This is a fluffy and delicious carrot cake.

Ingredients: 20 cm square pan / 18 cm diameter round pan

Pancake mix
200 g
about 150 g
100 g
Vegetable oil (or unsalted butter)
100 ml
30 ~ 50 g


1. Beat the eggs in a bowl, and add the grated carrot, sugar, vegetable oil (or melted butter), and pancake mix.
2. Once mixed well, add the raisins. Line the pan with parchment paper, and pour in the batter. Bake in the oven for 25 minutes at 180℃.
3. Done.
4. This was made in a 18 cm diameter circular pan.
