Veggie-packed Minestrone Soup

This minestrone soup is filled to the brim with vegetables.
It even tastes delicious when chilled.

Ingredients: 4-5 servings

Tomatoes
2 medium
Zucchini
1
Cabbage
1/4
Onion
1/2
Potatoes
2 to 3 medium
Bacon (block)
1-2, 5 mm thick slices
Salt
1 scant teaspoon
Grapeseed oil
as needed
Water
4 cups
Pepper
to taste
Sugar
1/2 teaspoon
Consommé soup stock granules
2-3 teaspoons

Steps

1. Remove skin of the tomatoes by parboiling and then cut one tomato into cubes. Put the other tomato into the food processor. Dice the potatoes, cabbage, and zucchini into 1 cm cubes.
2. Chop the onion and bacon into 1 cm cubes. Put sesame oil in a pot and stir-fry the onion, bacon, potatoes, zucchini, and cabbage.
3. Add the water to Step 2 and then add the tomatoes. Add the consommé granules and simmer until the vegetables become tender.
4. Once the vegetables have boiled, season with salt, pepper, and 1/2 teaspoon of sugar.
