Basic Tare Sauce for Eel

It's really easy to make your own tare sauce for eel. This sauce is versatile, so it's convenient to have it on hand for use in other dishes too.


75 ml (5 tablespoons)
25 ml (2 scant tablespoons)
Soy sauce
90 ml (6 tablespoons)
50 g (6 tablespoons)


1. Add the mirin and sake to a pot and bring to a boil. Add sugar and soy sauce, and simmer over a very low heat for about 15 minutes.
2. Pour the sauce into a boiled and sterilized jar, and keep it in the refrigerator.
