Crispy Shrimp & Vegetable Fritters

Once you can remember the trick to frying these fritters, you'll never fail.

Ingredients: 4 servings

Squid
1
Shrimp
8-10 small
Mitsuba
1 bunch
Japanese leek

★Baking powder
1/2 tablespoon
★Cake flour
1 cup
★Egg
1/2
★Ice cold water
egg + water = 180ml
★Sugar
1/2 teaspoon
Homemade mentsuyu
as needed

Steps

1. Prepare the shrimp and cut in half. Skin the squid and cut into 3 cm pieces. Cut the leeks into 1 cm pieces and the mitsuba into 3 cm pieces.
2. Coat the squid and shrimp with flour. Put the ★ ingredients into a bowl to make the coating. Divide the squid and shrimp into 4 portions, place each portion on a separate plate, and cover with the coating.
3. Deep-fry in 170℃ oil until golden brown.
