Fried Sandwiched Eggplant

This is a fried eggplant sandwich. Serve with a drizzle of ponzu.

Ingredients: 4 servings

Eggplant
4 (small Japanese type)
● Chicken thigh or ground chicken thigh
100 - 150 g
● Grated ginger
1 teaspoon
● Japanese leek (finely chopped)
1/3
● Salt
1/2 teaspoon
Katakuriko
1 teaspoon
Green onions (finely sliced)
as needed
Oil
to taste
Ponzu
as you like

Steps

1. Cut the eggplant in half lengthwise and make a slit from the middle of the thick bottom to just below the stem. Remove the skin from the chicken and mince with a food processor.
2. In a bowl, add the ingredients marked with ● and knead. Add the katakuriko and knead well.
3. Using a tea strainer, sprinkle katakuriko inside the eggplant and put the filling of Step 2 in between. Deep fry slowly over medium heat until cooked through.
4. Transfer to a serving dish and sprinkle green onions. Serve with ponzu.
