Bone-In Chicken Curry

Bone-in chicken bulks up the dish to make a filling chicken curry.

Ingredients: 4 servings

Bone-in chicken legs
Finely chopped onions
1 1/2
Grated or finely chopped carrots
Thinly sliced garlic
1 clove
Finely chopped celery
Roughly chopped tomatoes
Grated apple
Curry powder
2~3 tablespoons
Soup stock cubes
as needed
Hayashi rice roux
1~2 cubes
Water or hot water
1000 ml
Japanese Worcestershire-style sauce
to taste
as needed
Vegetable oil
as needed

1. Prepare the ★ turmeric rice or paprika rice.
2. Season the bone-in chicken with salt and pepper and dredge with flour. Heat oil in a frying pan and cook the garlic and chicken until browned.
3. Remove the meat, add the finely chopped onions, and stir-fry well. Add the celery and continue to stir-fry.
4. Transfer Step 3 into a pot and add the water, soup stock granules, apple, grated carrots, chopped tomatoes, and Step 1 chicken. Simmer.
5. Add the sautéed curry powder and whatever spices you prefer (such as all spice and garam masala).
6. Finally, add the hayashi rice roux, honey, and sauce to season.
7. Put the rice on a dish and pour the meat and curry. Garnish with parsley.

Story Behind this Recipe

I made an inexpensive curry using bone-in chicken. I thought it up as a I went along. You can also used cut canned tomatoes.
