You can make rich, fragrant eggplant dengaku in the microwave. Just brush the eggplant with pure sesame oil and bake in your oven.
Eggplant becomes overly-greasy when fried, but if you just bake it it feels like it's missing something. I brushed the tops with sesame oil before baking.
The sesame oil adds fragrance and prevents the baking eggplants from becoming overly dry.
