American Eggplants and Sesame Oil Dengaku Miso

You can make rich, fragrant eggplant dengaku in the microwave. Just brush the eggplant with pure sesame oil and bake in your oven.

Ingredients: 1 eggplant

American eggplant
Pure sesame oil
1 tablespoon
Toasted sesame seeds
to taste
Dengaku miso
2 tablespoons
2 tablespoons
1 teaspoon
Soy sauce
1/2 teaspoon
Pure sesame oil
1 teaspoon


1. Cut the stem off the eggplant, and make vertical incisions through the skin with a knife at 1 cm intervals. Cut into 4 equal rounds, and rinse in water to reduce the astringency.
2. Mix the dengaku miso ingredients together, and line and oven tray with parchment paper.
3. Thoroughly dry the eggplant, brush the flesh with sesame oil, and transfer to an oven-proof dish. Then brush the skin with sesame oil.
4. Bake in the oven for 8 minutes, briefly remove to coat with the Step 2 miso mix, and return to the oven until golden brown. Scatter with toasted sesame seeds and it's done.

Story Behind this Recipe

Eggplant becomes overly-greasy when fried, but if you just bake it it feels like it's missing something. I brushed the tops with sesame oil before baking.
