Versatile Yogurt Cream in a Microwave

This is a versatile cream made with yogurt. Use in muffin batter, fill cream puffs, or top on tarts.


180 g
80 g
Egg yolk
200 ml
Cake flour
1 tablespoon
Corn starch
2 tablespoons
Lemon juice
1 teaspoon


1. Sift the cake flour and corn starch into a heatproof bowl. Pour in 1/3 of the milk and mix.
2. Add the egg yolk and mix well. Stir in the rest of the milk and the sugar. Cover with a plastic wrap and microwave for 2 minutes.
3. Take the bowl out of the microwave. Mix well with a whisk, then fold in the yogurt. Microwave for another 2 minutes.
4. Add lemon juice and whisk some more to finish.
