Light and Delicious Potato Salad

A potato salad packed with veggies, and seasoned with whole grain mustard and vinegar.

Ingredients

Potatoes
4 (400 g)
Onion
1/4
Lettuce
1 to 2 leaves
Cucumber
1/2 of one
Imitation crab sticks
1 pack
☆Vinegar
1 1/2 tablespoons
☆Mayonnaise
4 tablespoons
☆Whole grain mustard
2 teaspoons
Salt and pepper
to taste

Steps

1. Microwave the potatoes. Thinly slice the onion, rub it with salt, and soak in water. Thinly slice the cucumber. Shred the lettuce into bite-sized pieces.
2. Put the boiled potatoes in a bowl, and remove the peel as you mash them with a fork. Add the onion, cucumber, crab sticks and lettuce.
3. Mix in the ☆ dressing, and season with salt and pepper.

Story Behind this Recipe

I like potato salad and make it with various vegetables. I decided to add whole grain mustard instead of Japanese mustard, and it turned out really nice.
