Portuguese Chickpea Salad

It's an easy and nutritious traditional Portuguese salad.

Ingredients: 2 servings

Chickpeas (dry-pack, canned)
2 cans (about 220 g)
Onions (finely chopped)
Boiled egg (finely chopped)
Parsley (finely chopped)
1 sprig
Olive oil
3 tablespoons
1 tablespoon
Salt and pepper
to taste


1. In a bowl, mix the chickpeas, onion, parsley, olive oil and vinegar. Season the mixture with salt and pepper.
2. Transfer the mixture from Step 1 onto a plate, and top it with a finely chopped boiled egg.

Story Behind this Recipe

This is one of the traditional Portuguese home cooked dishes. The recipe normally calls for black-eyed peas; but since they are hard to get, I made it with chickpeas (garbanzo beans).
