Oil- and Egg-free Tofu Cocoa Muffins

These muffins are oil- and egg-free, and contain lots of tofu. They have a soft, moist texture.

Ingredients: 6 muffins

◎Cake flour
100 g
◎Cocoa powder
20 g
a pinch
◎Baking powder
4 g
40 g
100 g
150 g


1. Preparation: Put the ☆ ingredients marked into a bowl and mix well with a whisk.
2. Put the ingredients marked ◎ in a different bowl and mix with the whisk. Add the ☆ mixture from Step 1, and fold it in with a rubber spatula.
3. Bake for 20-23 minutes in an oven preheated to 180°C. Adjust the baking time as necessary.

Story Behind this Recipe

My son, who is 3 years and 5 months old, said he wanted to eat chocolate. I had none to give him (because I had hidden it so I could have it later lol). Instead, I decided to make him some nutritious and healthy muffins, with cocoa and tofu. He loved them and ate two all in one go. He tried to eat a third, realised he had eaten too much, and gave me half. He helped me by whisking the mixture, so they were especially tasty for him.
