Egg and Tomato Stir-fry with Sweet Chili Sauce

It's easy!! The tartness of the tomatoes goes so well with sweet chili sauce.

Ingredients: 3 servings

3 to 4 small ones
Sweet chili sauce
1 to 2 tablespoons
Salt, pepper
To taste
Fresh parsley
To taste


1. Cut the tomatoes into wedges. (I cut each into 8 wedges.) Beat eggs in a bowl and season with salt and pepper.
2. Heat oil in a pan, and scramble the eggs until soft set. Transfer back into the bowl you beat the eggs.
3. Stir fry the tomatoes quickly, season lightly with salt and pepper, and transfer to the same bowl as the eggs. Add the sweet chili sauce, mix and it's done.
4. It goes well with rice of course, but it also goes well with bread.
5. Be sure not to over-cook the tomatoes! Just cook enough to coat them!
6. If you don't like the tomato skins, peel them first by dunking in boiling water for a few seconds then cooling them in cold water. Peeled tomatoes have a slightly different finish.
