Cut the tomatoes into wedges. (I cut each into 8 wedges.)
Beat eggs in a bowl and season with salt and pepper.
Heat oil in a pan, and scramble the eggs until soft set. Transfer back into the bowl you beat the eggs.
Stir fry the tomatoes quickly, season lightly with salt and pepper, and transfer to the same bowl as the eggs. Add the sweet chili sauce, mix and it's done.
It goes well with rice of course, but it also goes well with bread.
Be sure not to over-cook the tomatoes! Just cook enough to coat them!
If you don't like the tomato skins, peel them first by dunking in boiling water for a few seconds then cooling them in cold water. Peeled tomatoes have a slightly different finish.

I wanted to come up with a simple dish for dinner using sweet chili sauce.
You can just chop up the tomato if you like, but I cut it into wedges to enjoy their fresh flavor. Don't stir fry the tomato for too long. Have you tried sweet chili sauce? It's a bit sour, sweet, and just a bit spicy. I'm addicted to it. It's ok for kids too if you adjust the amount!! I've really been into sweet chili sauce recently, and I use it to flavor chikuwa fish sticks and wiener sausages for bentos too.
