Super Tasty Kabocha Salad with Heavy Cream

Kabocha salads are generally made with mayonnaise or yogurt... but I prefer heavy cream. It highlights the flavor of kabocha squash.

Ingredients: about 6 servings

Kabocha squash
2 tablespoons
Salt (for salting)
a small amount
Heavy cream
3-4 tablespoons
Salt and pepper
1/2 teaspoon


1. Peel the kabocha squash and dice. Microwave or boil them until soft.
2. Slice the cucumbers and sprinkle with salt. Place them in a colander.
3. When the cucumber slices are becoming soft, squeeze out the excess water.
4. When soft, drain the kabocha and put in a bowl and lightly smash it.
5. Add the cucumber slices and raisins to the kabocha.
6. Add the heavy cream, salt and pepper and combine.
7. Taste and adjust the seasoning.

Story Behind this Recipe

When I made the salad with mayonnaise or yogurt, it was a bit too tart for me. I liked it with heavy cream.
