Stir-Fried Pork, Lettuce and Eggplant with Miso

A healthy stir-fry with miso and lots of veggies.

Ingredients: Serves 2

Pork
130 to 150 g
Lettuce
2 to 3 leaves
Eggplants (small)
2
Onion
1/4
◎ Miso
2 tablespoons
◎ Mirin
1/2 tablespoon
◎ Sugar
1/2 tablespoon
◎ Sake
1 tablespoon
Salt
to taste
White sesame seeds
as needed
Vegetable oil
as needed

Steps

1. Remove the stem from the eggplant and make slits in the skin. Chop the pork, lettuce, and eggplants into bite-sized pieces. Julienne the onion.
2. Mix together the ◎ ingredients. Heat oil in a pan. Pan-fry the pork, onion, eggplant, and lettuce in this order. Add in the mixed seasonings and mix well.
3. Season with salt, sprinkle white sesame seeds and enjoy!!
