Grilled Salted Pork

Grilled Salted Pork

You can make some authentic and luscious salted pork by brining in the fridge for 3 days.

Ingredients: 4 servings

Pork shoulder (block)
500 g
Coarse salt
1/2 tablespoon
Grated garlic
2 teaspoons
Japanese leek
Black pepper
a pinch
Soy sauce
a small amount

1. With a paper towel, pat dry any excess water from the pork. Rub in the salt and garlic evenly.
2. Wrap with plastic wrap (2 layers). Put that into a plastic bag, press the air out, and close it up tightly. Brine in the fridge for 3 days.
3. Slice the pork into 5 mm. In a pan over medium heat, grill one side until it turns white. Do not use oil. Grill the other side briefly.
4. Remove the cooked meat. Chop the leek diagonally, and stir-fry in the same frying pan. Season with black pepper and soy sauce. Serve with the meat.

Story Behind this Recipe

I wanted to eat good meat outdoors. That's how I managed to put this recipe together.
