Avocado Ice Cream with Vegetable Based Ingredients Only

All ingredients of this ice cream are of vegetable origin. The texture might be hard, so leave at room temperature for a while before you eat.

Ingredients

Avocado

Soy milk
250 ml
Maple syrup
100 ml
Lemon juice
1 teaspoon
Grapeseed oil (optional)
1 teaspoon

Steps

1. Cut all the way around the avocado pit lengthwise. Split the avocado in half and remove the pit. Take the flesh out with a spoon, and drizzle lemon juice over.
2. Put the avocado, soy milk, maple syrup and the oil in a food processor and blend well.
3. When it has cooled a bit, chill in the freezer. I took it out from the freezer after a while, blended it again and put it back in the freezer.

Story Behind this Recipe

My friend said she makes avocado ice cream from milk and honey. I wanted to make a healthier ice cream, so I used soy milk and maple syrup instead.
