Simple Refreshing Pork and Tofu

A refreshing dish, which goes perfectly with rice.

Ingredients: 2 servings

Thinly sliced pork belly
200 g
Firm tofu
1 block
Shimeji mushrooms
1 packet
Daikon radish
100 ml
100 ml
◎Powdered Dashi (soup stock)
as needed
Vegetable oil
as needed
Chopped leek (optional)

1. Drain the tofu and cut into bite-sized pieces. Cut the ends off the mushrooms and shred. Cut the pork into 5 cm pieces and grate the radish.
2. Heat oil in a pan, and fry the pork. When it is cooked through, add mushrooms and tofu.
3. Add the ingredients marked ◎ and the radish, cover with a lid and simmer on low heat. Finally, add chopped leek and you're done.
