Toast a la Genovese

If you make homemade Genovese sauce, make this toast. I recommend using a sturdy bread like a baguette instead of soft sliced bread.

Ingredients: 1 serving

1 to 2 slices
Pesto genovese (Recipe ID: 581801)
4 to 6 teaspoons
Grated Parmesan or Pecorino cheese
a small amount
Black pepper to sprinkle just before eating
a small amount


1. Preheat the oven to 200°C. Spread 2 to 3 teaspoons of the pesto on each slice of bread, and sprinkle with grated Parmesan cheese. Bake until the cheese has browned. Sprinkle with black pepper at the table before eating.
2. Great for meals or snacks or as an aperitif with white wine.

Story Behind this Recipe

I had some leftover pesto that wasn't quite enough to toss with pasta, so I spread it on bread, sprinkled with cheese and baked it in the oven. Ever since then, it's become a family favorite.
