Slice the onion thinly along the grain. Slice all parts of the octopus, except for the web of skin between its tentacles, on the diagonal.
Put the ● ingredients in a bowl, mix, and add the cut octopus from Step 1, parsley, and garlic, and mix thoroughly. Cover with plastic wrap and let it chill for a while in the refrigerator, then it's ready to serve.
Try the same recipe for salmon. For salmon, you can mix the ingredients right before serving. The sauce will help retain the color of the salmon.

I created this with a refreshing taste as a side dish to eat between main dishes. My guests rave over this marinade.
The web of skin between the octopus tentacles is too watery, so discard. Try this recipe with parboiled squid, ham, or smoked salmon. Grain vinegar tends to be a bit too strong, so I don't recommend it. For those who find the onion too sharp or strong-smelling, soak in water before Step 2.
